Introduction


Food is any substance consumed by an organism for nutritional support. Food is usually of plant, animal, or fungal origin and contains essential nutrients such as carbohydrates, fats, proteins, vitamins, or minerals. The substance is ingested by an organism and assimilated by the organism's cells to provide energy, maintain life, or stimulate growth. Different species of animals have different feeding behaviours that satisfy the needs of their metabolisms and have evolved to fill a specific ecological niche within specific geographical contexts.
Omnivorous humans are highly adaptable and have adapted to obtaining food in many different ecosystems. Humans generally use cooking to prepare food for consumption. The majority of the food energy required is supplied by the industrial food industry, which produces food through intensive agriculture and distributes it through complex food processing and food distribution systems. This system of conventional agriculture relies heavily on fossil fuels, which means that the food and agricultural systems are one of the major contributors to climate change, accounting for as much as 37% of total greenhouse gas emissions. Cooking, also known as cookery or professionally as the culinary arts, is the art, science and craft of using heat to make food more palatable, digestible, nutritious, or safe. Cooking techniques and ingredients vary widely, from grilling food over an open fire, to using electric stoves, to baking in various types of ovens, to boiling and blanching in water, reflecting local conditions, techniques and traditions. Cooking is an aspect of all human societies and a cultural universal.
Preparing food with heat or fire is an activity unique to humans. Archeological evidence of cooking fires from at least 300,000 years ago exists, but some estimate that humans started cooking up to 2 million years ago.
The expansion of agriculture, commerce, trade, and transportation between civilizations in different regions offered cooks many new ingredients. New inventions and technologies, such as the invention of pottery for holding and boiling of water, expanded cooking techniques. Some modern cooks apply advanced scientific techniques to food preparation to further enhance the flavor of the dish served. (Full article...)
Food waste in the United Kingdom is a subject of environmental, and socioeconomic concern that has received widespread media coverage and been met with varying responses from government. Since 1915, food waste has been identified as a considerable problem and has been the subject of ongoing media attention, intensifying with the launch of the "Love Food, Hate Waste" campaign in 2007. Food waste has been discussed in newspaper articles, news reports and television programmes, which have increased awareness of it as a public issue. To tackle waste issues, encompassing food waste, the government-funded "Waste & Resources Action Programme" (WRAP) was created in 2000.
A significant proportion of food waste is produced by the domestic household, which in 2022, created 6.4 million tonnes of food waste (95kg or £250 per person); most of this was made up of salads and fresh vegetables. A majority of food waste food is avoidable,[d] with the rest being divided almost equally into foods which are unavoidable (e.g. tea bags) and those that are unavoidable due to preference (e.g. bread crusts) or cooking type (e.g. potato skins). A fast-food restaurant, also known as a quick-service restaurant (QSR) within the industry, is a specific type of restaurant that serves fast-food cuisine and has minimal table service. The food served in fast-food restaurants is typically part of a "meat-sweet diet", offered from a limited menu, cooked in bulk in advance and kept hot, finished and packaged to order, and usually available for take away, though seating may be provided. Fast-food restaurants are typically part of a restaurant chain or franchise operation that provides standardized ingredients and/or partially prepared foods and supplies to each restaurant through controlled supply channels. The term "fast food" was recognized in a dictionary by Merriam–Webster in 1951.
While the first fast-food restaurant in the United States was a White Castle in 1921, fast-food restaurants had been operating elsewhere much earlier, such as the Japanese fast food company Yoshinoya, started in Tokyo in 1899. Today, American-founded fast-food chains such as McDonald's (est. 1940) and KFC (est. 1952) are multinational corporations with outlets across the globe. (Full article...)

Similar to the cuisine of Australia, the cuisine of New Zealand is a diverse British-based cuisine, with Mediterranean and Pacific Rim influences as the country has become more cosmopolitan.

A mirepoix (/mɪərˈpwɑː/ meer-PWAH, French: [miʁ.pwa] ⓘ) is a mixture of diced vegetables cooked with fat (usually butter) for a long time on low heat without coloring or browning. The ingredients are not sautéed or otherwise hard-cooked, because the intention is to sweeten rather than caramelize them. Mirepoix is a long-standing part of French cuisine and is the flavor base for a wide variety of dishes, including stocks, soups, stews, and sauces.
When the mirepoix is not precooked, the constituent vegetables may be cut to a larger size, depending on the overall cooking time for the dish. Usually the vegetable mixture is onions, carrots, and celery (either common 'Pascal' celery or celeriac), with the traditional ratio being 2:1:1—two parts onion, one part carrot, and one part celery. Further cooking, with the addition of tomato purée, creates a darkened brown mixture called pinçage. (Full article...)

Kimchi (/ˈkɪmtʃiː/; Korean: 김치; RR: gimchi, IPA: [kim.tɕʰi]) is a traditional Korean side dish (banchan) consisting of salted and fermented vegetables, most often napa cabbage or Korean radish. A wide selection of seasonings are used, including gochugaru (Korean chili powder), spring onions, garlic, ginger, and jeotgal (salted seafood). Kimchi is also used in a variety of soups and stews. Kimchi is a staple food in Korean cuisine and is eaten as a side dish with almost every Korean meal.
There are hundreds of different types of kimchi made with different vegetables as the main ingredients. Such as baechu-kimchi, Kkakdugi, Chonggak-kimchi, and Oi-sobagi. Traditionally, winter kimchi, called gimjang, was stored in large earthenware fermentation vessels, called onggi, in the ground to prevent freezing during the winter months and to keep it cool enough to slow down the fermentation process during summer months. The process of making kimchi was called kimjang and was a way for the whole village to participate. The vessels are also kept outdoors in special terraces called jangdokdae. The bar was founded in 1929 as a speakeasy on Third Avenue by brothers Tim and Joe Costello, who had emigrated to the United States from Ireland. Tim was known as an affable, intelligent proprietor with an interest in literature. In the early 1930s, the bar moved to the corner of East 44th Street and Third Avenue, before moving one door away on Third Avenue in 1949. The bar moved to its final location at 225 East 44th Street in 1974. Costello's closed in 1992; the Turtle Bay Café took over the space, operating until 2005. Since then, the location has been occupied by a sports bar called the Overlook. The bar is remembered through the stories that have been told about it over the years. The writer John McNulty is credited with creating a mythology around Costello's—which he called "this place on Third Avenue"—through a series of short stories published in The New Yorker in the 1940s. Jamie Trevor Oliver MBE OSI (born 27 May 1975) is an English celebrity chef, restaurateur and cookbook author. He is known for his casual approach to cuisine, which has led him to front numerous television shows and open many restaurants.
Oliver reached the public eye when his BBC Two series The Naked Chef premiered in 1999. In 2005, he started a campaign, Feed Me Better, to introduce schoolchildren to healthier foods, which was later backed by the government. He was the owner of a restaurant chain, Jamie Oliver Restaurant Group, which opened its first restaurant, Jamie's Italian, in Oxford in 2008. The chain went into administration in May 2019.
