This is because there isn't really a good way to programmatically generate stablerefs. I've had good luck with https://data.census.gov/profile/${placeName.replace(' ','_')}?g=${placeGeoid}but that isn't really stable, not guaranteed to work, and most importantly doesn't represent a moment in time, like the moment the census was collected.
I could also cite the API directly but I think this is the better route.
Despite there being 40 thousand pages using {{US Census population}}, this script at most is capable of working on 30k of them at the moment, and the real amount is likely much smaller due to towns missing from Census data.
