Ismoru (Sinhala: ඉස්මෝරු, Tamil: இஸ்மோரு), also known as Sri Lankan beef curry or Ceylon beef curry, is a traditional spicy beef curry.[1][2] The dish originated in the northern regions of Sri Lanka but is popular around the country, mostly in the seaboard areas where fish and other seafood are staple foods. The dish is served with rice, roti or fried onion sambal.

Etymology

Ismoru is derived from the Dutch verb "smoor", which means "to braise food".[3][4] Although the term is Dutch, the dish with its spices is typically Asian and Sri Lankan.[5] This would suggest that the original Dutch stew had undergone several embellishments over the centuries to suit the local palate.

Preparation

The dish is typically prepared by cooking a large chunk of boiled beef in spices and other ingredients like onions, garlic, ginger, fenugreek, turmeric, chilli powder, curry powder, curry leaves, and lemon or tamarind juice over a low fire until it softens. Coconut milk is then added, and it is cooked a while longer after which the piece of beef is taken out and lightly fried in ghee before being added to the thick gravy.
