Recent edits commited are surprising and also disappointing. The new contents do not provide any definition of the term at all. They appear as ALGs are found predominantly on Windows. Windows specific details could have been added as a section to the existing article.

Agreed. ALG is much broader concept. It is defined in IETF RFC 2653, Section 2.9:
Application Level Gateways (ALGs) are application specific translation agents that allow an application on a host in one address realm to connect to its counterpart running on a host in different realm transparently.
