Hyderabadi marag or marag is a spicy mutton soup served as a starter in Hyderabad, India and part of Hyderabadi cuisine. It is prepared from tender mutton with bone.[1][2] It is thin soup.[3] The soup has become one of the starters at Hyderabadi weddings.Marag picture
Hyderabadi Marag — often simply called marag — is a fragrant and mildly spicy mutton soup that holds a special place in Hyderabadi cuisine. Traditionally served as a starter, especially at weddings and festive gatherings in Hyderabad, India, it is beloved for its rich aroma, delicate spicing, and comforting warmth.
The dish is prepared using tender cuts of mutton on the bone, which are slow-cooked to extract deep, meaty flavors. The soup is characteristically thin in consistency, yet packed with the essence of the mutton and an aromatic blend of spices such as cardamom, cinnamon, cloves, and black pepper. Fresh herbs, ghee, and sometimes ground nuts or coconut are incorporated to add a subtle creaminess without overpowering the light texture.

Ingredients
[edit]The ingredients include those locally available such as mutton with bone, onions, cashew nuts, curd, coconut powder, boiled milk, cream, ginger-garlic paste, salt, cardamom, cinnamon, cloves, black pepper powder, green chillies, etc. In some recipes, white flour is used to thicken the broth to give it a more creamy texture.[4]
