Crackling bread is a dish from the Southern United States which consists of cracklings and a type of bread, made of cornmeal. cornmeal. Cracklings are extremely similar to pork rinds and chicharrones, a dish made of fried pork rinds.

Use in American literature

Crackling bread is a meal featured in the book To Kill a Mockingbird by Harper Lee. It is the narrator's, Scout, favorite snack. It is cooked for her by her family chef Calpurnia when she has behaved well. The first time it appears is when Scout goes to school for the first time. "It was not often that she made crackling bread, she said she never had time, but with both of us at school today had been an easy one for her. She knew I loved crackling bread." Scout's home cook Calpurnia had been very tough on her, and to make it up, she sweet-talks her and makes her crackling bread.
